Ichinokura, a sake brewery in Matsuyama, Osaka City, Miyagi Prefecture, began harvesting rice, the raw material for the new sake, on September 5th. The brewing of the new sake will begin on September 24th. Rice harvesting on the 5th was carried out in the rice field where “Ichinokura” is grown, and “Yama no Shizuku” planted in May was harvested by a combine harvester. There were concerns about the effects of this year’s heat wave, but as a result of careful water management, growth has progressed about a week earlier than usual and there has been no damage from high temperatures and we are expected to be able to harvest the same 3 tonnes as and in previous years. When used as a sake mash, Yama no Shizuku facilitates rice solubilization and fermentation control, making it suitable for making sake among early rice varieties, so Ichinokura used it to brew new sake. I’ve been using it for about 15 years. Ichinokura President Sei Suzuki: “I think we have probably produced rice with good starch content, so we are looking forward to brewing sake this year as we will brew high-quality sake from this starch.” That’s how I felt when I saw the rice.” Ichinokura plans to start brewing new sake on September 24th, using rice harvested on the 5th. The expected delivery date for the new sake is November 13th.
