Check out the complete recipe below Don’t forget to pre-order Gordon’s latest cookbook Fast and delicious: http://po.st/VdFBEt Pumpkin Pancakes with Creamy Almond Sauce Yield: 2 servings Bread For the cake: 1 C pumpkin puree 3 pieces. Lg. Eggs 1 t Vanilla 2 t Baking powder 1/2 C Almond flour 1/2 C Arrowroot starch 1 1/2 t Chai spices (cinnamon, cardamom, ginger, allspice, cloves, nutmeg) 1/4 t Salt Coconut oil Spray 1/4 t butter (for serving) maple syrup (for serving) creamy almond sauce (for serving) Method: In a medium bowl, mix together pumpkin, eggs, and vanilla until homogeneous. Combine dry ingredients in a separate bowl. Add to wet ingredients. Whisk until just combined. Heat a griddle pan (alternatively a large sauté pan) to medium heat, spray with coconut oil and place 1/2 C batter on each pancake. Fry on one side until the edges are set and the center is bubbly (it should be light golden brown). Flip and cook the other side until light golden brown. Stack the cooked pancakes and cover with a clean kitchen towel to keep warm. Repeat until the dough is finished. Serve a stack of pancakes. Top with pure maple syrup and whipped cream. For the almond sauce: 1/2 C liquid unrefined coconut oil (Nutiva) 1/2 C creamy almond butter (MaraNatha 1 ingredient, roasted) 1/2 C maple syrup 1 t vanilla extract 1/2 t chai spice powdered sugar Pinch of salt Directions: Small Heat the coconut in a saucepan. Brush with oil until just warm. Turn off the heat, whisk the remaining ingredients until homogeneous, and set aside. (Tag Translation) Gordon
