Today I’m taking you across Bangkok to explore some of my favourite everyday Thai dishes, while gathering inspiration for an exciting summer collaboration in London with Chet’s at the Hoxton.

We start down a backstreet in Thonburi with one of Thailand’s most comforting meals, gai ob ong (clay pot baked chicken), served alongside a refreshing dtum taeng (Thai cucumber salad). From there, we head into Bangkok’s historic old town to visit an 80-year-old ice cream shop that’s been serving traditional coconut ice cream to generations of locals.

Our final stop takes us to Thonburi Market Place, one of Bangkok’s biggest food markets, where we’ll feast on grilled river prawns, fiery sweetcorn dtam and smoky kor moo yang, one of Thailand’s most beloved grilled pork dishes that’s surprisingly difficult to find in the UK.

These dishes, flavours and stories will help inspire a Bangkok-style street food market pop up taking place every weekend this summer at Chet’s at the Hoxton in London. Running from June 16th through August, the series will bring the atmosphere, flavours and energy of Bangkok’s street food scene to Shepherd’s Bush.
